meet TOTI - a 100% natural rum that is perfect for sipping, and does some good at the same time.
We wanted to celebrate rum’s unique connection to the sea. So named our rum TOTI, the Creole word for “turtle”, and decided that it should support marine conservation.
To make TOTI we bring together amazing rums from distilleries across the Caribbean, and painstakingly blend them into unique spirits that break down the barriers of established rum making traditions and burst with flavour.
Cask reserve dark rum
Cask Reserve is a dark aromatic sipping rum with a full bodied flavour and smooth finish. Our master blend combines a very special five year old cane “agricole” rum from The Dominican Republic with a funk filled fusion of three year old barrel aged pot-still rums from across the Caribbean. The blend is finished with fresh demerara rum and a lick of bittersweet blackstrap molasses.
CASK RESERVE DARK RUM
5 YEAR TROPICAL AGED "AGRICOLE" RUM
Just under half of Toti Cask Reserve is a rich complex barrel-aged “agricole” rum from the Dominican Republic. Our agricole rum starts life as ripe sugar cane, the cane is cut and pressed to extract its juice, the juice is fermenting using local yeasts to produce an alcoholic wash of around 8% abv, this wash is distilled in column stills to produce an 80% overproof agricole rum. Finally the overproof rum is cut back with water to 70% and put into ex-bourbon American white oak barrels – where they are left for five long years of accelerated tropical aging in the consistent humid heat of the Caribbean.
POT STILLED MOLASSES RUM
The other key element in the Toti Cask Reserve blend is molasses rum. Molasses is produced by boiling down pressed sugar cane juice – this process produces sugar crystals and a thick dark treacly liquid called molasses. The molasses is mixed with water and fermented to produce an alcoholic wash of 7% alcohol which is then distilled to produce higher strength spirit.
Toti uses six different styles of molasses rum from six different distilleries in its rum blend. From Jamaica we source three highly complex aromatic rums that are produced in centuries old distilleries using centuries old yeast cultures and time honoured traditional methods. Dryness and minerality comes from lighter column still spirits from Barbados & Trinidad. All these rums have been tropically aged in ex bourbon oak casks for three years acquiring complexity and smoothness.
THE BLEND
The magic of Toti Rum is very much in its secret blend – masterminded by founder Mark Douglas Hill and Dutch rum maestro Hein Smit. The elements are blended at high strength and then cut to two classic bottling strengths of 38% & 42%. To maintain a lively, aromatic tanginess and fruitiness in Toti Cask Reserve, we finish the blend with some fresh Demerara rum from Guyana and an 8g/L “dosage” of bittersweet blackstrap molasses.
TASTING NOTES
On the nose – Cask Reserve is richly fragrant with prominent notes of caramelised banana and dried mango. The taste is rich and complex with notes of treacle tart, vanilla & ripe banana. The finish is sustained and buttery, with hints of liquorice.
Famous five white rum
Famous Five is a multi-island “best-of-both-worlds” master-blend of the two main rum making traditions; fresh, grassy, vegetal “Agricole” rum and rich, complex, aromatic Molasses rum.Our unique blend is sourced from distilleries in Jamaica, Barbados, Trinidad, Guyana & The Dominican Republic - our Famous Five!
PURE SUGARCANE AGRICOLE RUM
Just over half of Toti Famous Five White is a wonderfully fresh, single estate, “Agricole” rum from the Dominican Republic. The first step in producing this rum is the harvesting of sun-ripened sugarcane from the fields all around the distillery. The freshly cut sugarcane is run through mangles to cold-press its sweet vegetal juice. This juice is fermenting using local yeasts to produce an 8% alcoholic “wash”. This wash is then distilled in column stills to concentrate the alcohol, finally producing an 80% overproof agricole rum.
POT STILL MOLASSES RUM
The aromatic, funky elements in Famous Five come from the other key element in the Toti blend – unaged molasses rum. Molasses is produced by boiling down pressed sugar cane juice, The juice is boiled three times, at each boiling sugar crystals are removed and what is left is a hugely aromatic, mineral rich, treacly liquid called molasses. This liquid is mixed with water and fermented to produce an alcoholic wash of 7% alcohol. This wash is then distilled to produce spirit.

From Jamaica we source three highly complex aromatic rums that are produced in centuries old distilleries using centuries old yeast cultures and time honoured traditional methods. Dryness and minerality comes from lighter column still spirits from Barbados & Trinidad, whilst aromatic tanginess and fruit comes from the Demerara river in Guyana produced in a wooden Coffey Still.

TASTING NOTES
On the nose – Famous Five is richly fragrant with prominent notes of banana, pineapple and vanilla. The taste is clean and fresh with notes of toffee, butterscotch and sweet vanilla. The finish is long and complex with hints of white pepper and fresh-cut grass.

Marine Conservation
Toti Rum is all about love for the seas, and truly it breaks our heart to see the sorry state of them right now. We want Toti to be part of the solution and are proud to be donating 15% of our profits to marine conservation charities, protecting turtles and the seas they swim in.
Our first charity partner are Sea Shepherd – the two projects we are specifically supporting is Sea Turtle Conservation in the Caribbean and Operation Ghostnet.
Our commitment to sustainability
Sustainable Rum
Our rum distillery must be one of the most eco-friendly in the world. Forget about carbon-neutral – this place is actually carbon positive!! The sugar cane that feeds the distillery grows all around it (reducing transport of raw materials) and the distillery itself is self-powered using milled sugar cane as carbon neutral bio-fuel. Most amazingly - the CO2 produced as the sugar cane juice ferments is captured and bottled rather than escaping into the atmosphere.
The Label
Bio-degradable paper labels printed with environmentally friendly vegetable based inks, or ceramic ink screen print directly onto the bottle.
Cork Stopper
Our stoppers are glue-free, made from natural cork mixed with rubber.
Wax Dipped Seal
Every bottle of Toti Rum is finished by hand - with a traditional wax dipped seal
Environmentally Friendly Bottle
Our glass bottles are produced in the UK, very close to where Toti is bottled and are specially designed to be as green as possible. They are lightweight (at 489g they use a third less glass than is normal) and are made from 60% recycled glass, all of which is sourced from the UK. Whoop Whoop!
